Cheese tasting on the Alpine pasture
At the Elisabeth Hotel we focus on high-quality food that comes directly from regional Tyroelan producers and farms. Some of our products are even produced in our hotel's own Kasplatzl dairy, at the cake shop and the Scherrhof farm. Organic cheese with visible origins
From the fresh alpine milk to the cheese on your plate: Hans Walch jun., an enthusiastic farmer, is the Kasplatzl dairy owner and from his “exhibition dairy” the delivery channels to our hotel couldn't be shorter. The animal “suppliers” are grazing right in front of the hut, while inside you can taste the best Tyrolean alpine products in the rustic parlour: homemade cheese, bacon and sausage specialties, fresh alpine butter, organic dairy products and bread from their own oven.
The art of cheesemaking
During only one summer 100,000 litres of milk are used to make 10 tons of cheese or 1,100 cheese wheels – the successful outcome of Silvester “Vest” Horngacher, he is also the cheesemaker you can watch during his work. The dairy farm itself is not accessible, because of hygiene regulations, but you will get interesting insights into the high art of cheesemaking during the “Kas Tours”. The highlight is without a doubt the cheese tasting: mountain cheese, semi-hard cheese, cream cheese, soft cheese, etc.
Btw: every Wednesday is “Kaspatzl” day on the alpine pasture. Visit the Kaspatzl dairy at lunchtime and indulge in the homemade “Käsespätzle” (tiny dumplings with cheese) fresh out of the cast iron pan – while supplies last.
